Recipe Fried Rice with Corn Beef


Open a can of corn beef and lightly loosen the lump.

Peel fresh corn. Cut cob into two pieces and slice off kernels.

Cut ends off green beans or string beans.

Peel carrot and chop into small pieces about the size of a kernel of corn.

Peel ginger and chop into fine pieces.

Chop long white leek into fine pieces.

Put green beans in lightly salted boiling water and boil. When done, soak in cold water and let it cool. Drain and chop into 5mm widths.

Put fresh corn kernels and carrots together in boiling water, boil for 1 minute. Drain thoroughly in a sieve.

Heat oil in a Chinese pan over high heat. Add corn beef, chopped ginger and leek, and stir-fry while loosening corn beef with a wooden spatula.

When they are cooked, add corn, carrot and chirimenjako (dried and seasoned baby sardines and anchovies) and stir-fry together. Add curry powder and stir-fry.

Add rice in the pan and stir-fry together with other ingredients. Season with salt, pepper and worcester sauce. Add green beans. Turn off the heat and mix evenly. Transfer to serving dishes.
