Shiitake Mushroom Soup

Recipe Shiitake Mushroom Soup


First:

Chop off the hard tips of fresh shiitake mushroom stem. Wipe dust off with tightly wrung cheesecloth. Cut stem from cap. Tear stem lengthwise into small strips with hands. Cut cap into fine strips.

Cut onion lengthwise into thin slices.

Remove roots of bean sprouts, if possible. Soak in ample water until crisp. Drain well in sieve.

Place dashi stock (basic stock) in pot and heat over high flame. When it comes to boil, add onion and .

When it boils again, add fresh shiitake mushroom and drained bean sprouts. When onion softens, add finely chopped leek. When it boils, remove from heat.

Transfer to cups and sprinkle with coarsely ground black pepper.
