First:

Trim off stems from fresh shiitake, wipe off the dust and cut and separate caps from stems. Tear stems vertically and slice caps thinly.

Trim off stems from shimeji, and separate into small clusters.

Trim off stems from enoki, and cut in half. Separate the bottom part

Second:
Boil mushrooms shortly in salt-added hot water. Drain in a sieve and mix with while mushrooms are still hot.
