Shrimp Tempura Sushi Roll

Recipe Shrimp Tempura Sushi Roll

Prepare sushi roll with shrimp tempura. Good for lunch box.
First:

Remove prawn shell, leaving the tail. Trim the tail tip and scrape to remove any moisture with the dull edge of a knife. Make a shallow cut on the back of the prawn and devein. Make several little cuts across the underside of prawn, press on the back to flatten on a cutting board.

Step 1

To make , mix egg yolk and ice water in a bowl. Sift flour and cornstarch into the bowl. Mix lightly and quickly, allowing it to remain somewhat floury.

Wash rice and drain in a sieve. Place washed rice in rice cooker. Wipe konbu kelp with a damp cloth to clean and place it on top of rice in the cooker. Add sake and cook with the machine’s standard amount of water required for sushi rice.

“To wash rice: Measure rice and place in a bowl. Add plenty of water and drain immediately without stirring. Pour just enough water to cover the rice. Scoop rice in both hands and rub grains together gently several times. Discard cloudy water. Fill the bowl with splashing water from the tap. Rinse rice and drain. Repeat until water is almost clear.

Rice will most easily absorb the water that is first put into the bowl so it is recommended that good quality water is used.


To prepare the , combine all the ingredients in a small pan and bring to a boil.

When rice is cooked, remove the kelp. Put 1-2 tablespoon sugared vinegar in a handai (a large shallow wooden bowl) and spread evenly inside. Transfer cooked rice to the handai. Evenly sprinkle sugared vinegar over the rice and mix in a slicing motion. Let it cool to body temperature.

Step 2

Place a sheet of nori seaweed on a bamboo rolling mat. Thinly spread one fourth of the rice over the nori while leaving 1cm(0.4 inch) empty space on the bottom and 2cm(0.75 inch) on the top. Put 2 prawns on top of rice. While holding the prawns in place, roll up the bamboo mat to help nori and rice wrap around the prawns. Lightly press to shape the roll. Prepare remaining three rolls in the same way.

Step 3

Cut each roll into portions easy to eat and arrange on dish.
