Enoki Mushrooms and Tomato Salad
First:
Rinse enoki in water, trim off the root, cut into 3 equal lengths, separate the bottom parts into bite-sized clusters.
Remove stems from cherry tomatoes, put a cut in the skin with a knife. Remove stems from tomatoes. Place both cherry tomatoes and tomatoes in hot water and boil until their skins start to break. Take them out, soak in cold water and peel. Wipe to dry and cut tomatoes into the same size as cherry tomatoes.
