Stir-Fried Shrimps and Nira (Chinese Chives)

Shell and devein shrimp, rinse in water, and cut in half.
Rinse nira (Chinese chive) in water, trim off the root, cut into 3cm(1.2 inch) lengths.
Beat eggs.
Second:Heat 1Table spoon of vegetable oil in a frying pan, pour beaten eggs at once, mix with cooking chopsticks as drawing a big circle, take out from the pan with soft-boiled.
Heat remaining vegetable oil in the #1 pan over medium heat, cook shrimp, as it turns red, add nira (Chinese chives) and cook shortly.
